Asparagus Soup

I used to throw away the woody stems of asparagus but recently learned that I could make asparagus soup. This soup is best with homemade chicken stock. If making it with canned or boxed chicken broth, throw in some chopped carrots, celery, and onions to add some extra flavor. 

Ingredients

  • 6 cups chicken stock or broth

  • 10-20 stems of asparagus (depending on the size

Instructions

  • Combine chicken stock and asparagus in a large pot. I usually use fresh homemade stock without removing the vegetable chunks.

  • Cook until the asparagus is soft and a fork easily pierces through the thickest part of the stem.

  • Use an immersion blender to blend the soup together.

  • After blending, scoop out a the really woody parts of asparagus. I do this periodically while blending as some gets stuck in the blades of the blender.

  • Serve warm and garnish with dill.
