Baked Cod

This simple recipe for fish includes some vegetables and herbs to give the cod a little more flavor. Serve with cooked vegetables or salad to make this a balanced meal.

Ingredients

  • ½ onion, sliced

  • Black pepper to taste

  • Salt to taste

  • 4-6 Cod Filets

  • 1 tomato, sliced

  • ½ red pepper, sliced

  • Chopped parsley

  • Lemon, sliced

  • 3 tablespoons butter

  • 1 bay leaf

  • Coriander

  • 2 tablespoons tomato paste

  • ½ cup hot water

Instructions

  • Line a 9x13-inch baking dish with parchment paper and coat with a non-stick spray.

  • Cover the pan in a layer of sliced onions, using about 2/3 of the slices.

  • Sprinkle salt and black pepper over the onions to taste.

  • Layer the cod fillets on top of the onions.

  • Season the fish with salt and black pepper to taste.

  • On top of the fish, layer the sliced tomatoes, remaining sliced onions, and sliced red bell pepper.

  • Season with chopped parsley and layer sliced lemon on top.

  • Finally, put three tablespoons of butter (divided into tablespoons) on top, and sprinkle with coriander and a crumbled bay leaf.

  • Mix the tomato paste with hot water and pour into the pan.

  • Bake at 400F for about 15 minutes, until fish is firm and flakes easily.
