











Baked Cod
This simple recipe for fish includes some vegetables and herbs to give the cod a little more flavor. Serve with cooked vegetables or salad to make this a balanced meal.
Ingredients

½ onion, sliced

Black pepper to taste

Salt to taste

4-6 Cod Filets

1 tomato, sliced
-
½ red pepper, sliced

Chopped parsley
-
Lemon, sliced
-
3 tablespoons butter
-
1 bay leaf
-
Coriander
-
2 tablespoons tomato paste
-
½ cup hot water
Instructions

Line a 9x13-inch baking dish with parchment paper and coat with a non-stick spray.

Cover the pan in a layer of sliced onions, using about 2/3 of the slices.

Sprinkle salt and black pepper over the onions to taste.

Layer the cod fillets on top of the onions.

Season the fish with salt and black pepper to taste.

On top of the fish, layer the sliced tomatoes, remaining sliced onions, and sliced red bell pepper.

Season with chopped parsley and layer sliced lemon on top.

Finally, put three tablespoons of butter (divided into tablespoons) on top, and sprinkle with coriander and a crumbled bay leaf.

Mix the tomato paste with hot water and pour into the pan.

Bake at 400F for about 15 minutes, until fish is firm and flakes easily.
