Carrot-Yogurt Salad
This Turkish dish has strong garlic flavors and works well as a side dish or as meze with the anise-flavored alcoholic drink Raki. It can also be used as a dip for bread or crackers.
Ingredients
- 2 tablespoons olive oil
- 3 large carrots, grated
- Salt to taste (about ½ teaspoon)
- 3 large spoonfuls of yogurt (or more if you prefer a creamier salad)
- 1 tablespoon mayonnaise
- 1 clove garlic, grated
Instructions
- In a skillet, heat olive oil over medium heat.
- Add the grated carrots and salt.
- Sauté until the carrots change color to a yellow-orange, about 10 minutes.
- Remove from heat and put carrots in a serving dish.
- Add the yogurt, mayonnaise, and grated garlic and mix well.
- Garnish with fresh herbs and hot pepper flakes or paprika.
