Carrot-Yogurt Salad

This Turkish dish has strong garlic flavors and works well as a side dish or as meze with the anise-flavored alcoholic drink Raki. It can also be used as a dip for bread or crackers.

Ingredients

  • 2 tablespoons olive oil
  • 3 large carrots, grated
  • Salt to taste (about ½ teaspoon)
  • 3 large spoonfuls of yogurt (or more if you prefer a creamier salad)
  • 1 tablespoon mayonnaise
  • 1 clove garlic, grated

Instructions

  • In a skillet, heat olive oil over medium heat.
  • Add the grated carrots and salt.
  • Sauté until the carrots change color to a yellow-orange, about 10 minutes.
  • Remove from heat and put carrots in a serving dish.
  • Add the yogurt, mayonnaise, and grated garlic and mix well.
  • Garnish with fresh herbs and hot pepper flakes or paprika.
