











Cauliflower and Beef Stew
This is a great winter meal with lots of vegetable and a little meat. This is great served with spicy pickled vegetables or eat plain.
Ingredients

675 grams (1 head) of cauliflower, chopped into bite-size pieces

½ pound ground beef

½ onion, finely chopped
-
15 baby carrots, sliced
-
2 tablespoons tomato paste
-
½ tablespoon salt
-
¼ cup olive oil or butter
-
2 cups water
-
A pinch of dried thyme
Instructions

Boil the cauliflower on medium-high heat for 10 minutes.

Rinse the cauliflower with cold water after boiling and set aside.

Cook the ground beef in a medium-sized pan with olive oil or butter over medium heat for 10 minutes.

Add the onions and cook 5 minutes.

Add tomato paste, salt, ½ cup water, and carrots. Cook for 5 more minutes.

Place 1 ½ cups water and cauliflower in a large pan.

Add the ground beef mixture.

Heat on high until the water boils, then reduce heat and simmer with the lid closed for 25 minutes.

Just before serving, add a pinch of dried thyme and let cook for 2 more minutes.

Serve warm in bowls.
