Cauliflower and Beef Stew

This is a great winter meal with lots of vegetable and a little meat. This is great served with spicy pickled vegetables or eat plain.

Ingredients

  • 675 grams (1 head) of cauliflower, chopped into bite-size pieces

  • ½ pound ground beef

  • ½ onion, finely chopped

  • 15 baby carrots, sliced

  • 2 tablespoons tomato paste

  • ½ tablespoon salt

  • ¼ cup olive oil or butter

  • 2 cups water

  • A pinch of dried thyme

Instructions

  • Boil the cauliflower on medium-high heat for 10 minutes.

  • Rinse the cauliflower with cold water after boiling and set aside.

  • Cook the ground beef in a medium-sized pan with olive oil or butter over medium heat for 10 minutes.

  • Add the onions and cook 5 minutes.

  • Add tomato paste, salt, ½ cup water, and carrots. Cook for 5 more minutes.

  • Place 1 ½ cups water and cauliflower in a large pan.

  • Add the ground beef mixture.

  • Heat on high until the water boils, then reduce heat and simmer with the lid closed for 25 minutes.

  • Just before serving, add a pinch of dried thyme and let cook for 2 more minutes.

  • Serve warm in bowls.
