Chickpeas with Ground Beef

This is a great cold-weather meal. This Turkish dish is best when served with dill pickles. It can be eaten alone or served with quinoa or brown rice.

Ingredients

  • 1 tablespoon vegetable oil

  • ½ cup chopped onion

  • ½ pound ground beef

  • 2 15-oz cans of garbanzo beans

  • 2 tablespoons tomato or pepper paste

  • 3 cups of water

  • Salt and pepper to taste

Instructions

  • Heat oil over medium heat in a large pot.

  • Add ground beef and cook until browned.

  • Add onions and saute until tender, about 5 minutes.

  • Add beans and mix.

  • Pour water into pot, add paste, and mix well.

  • Season with salt and pepper to taste.

  • Bring to a boil, reduce heat, then cover and simmer for about 20 minutes.
