Curried Chicken Salad
After eating salad every night for dinner for the past 2 years, we were starting to get tired of the same toppings. This is one of my solutions to our salad monotony. For this recipe, I used the chicken thighs that I poached while making chicken stock. My favorite way to serve this chicken is on a bed of salad greens with walnuts or pecans added for some extra crunch.
Ingredients

½ cup diced bell pepper

½ cup diced celery

3 cups chopped cooked chicken

⅔ cup mayo
-
¼ teaspoon mustard powder

⅜ teaspoon paprika
-
⅜ teaspoon curry powder

1 tablespoon olive oil
Instructions

Mix the spices together and combine with the mayo and olive oil.

Add the vegetables and chicken.

Mix well and serve plain or on top of salad.
