

Kuru Fasulye (White Bean Stew)
This Turkish dish is a great way to prepare beans. It can be served as a side dish or add extra vegetables and meat to serve this as the main course.
Ingredients

2 tablespoons olive oil

½ onion, chopped

Optional: 2 inches of sujuk (beef sausage), thinly sliced

1 tablespoon each, tomato paste and pepper paste

2 Roma tomatoes, diced

1 cup water
-
1 teaspoon pepper flakes (or to taste)

Salt and black pepper to taste

2, 15-oz cans of butter beans or large white beans, drained and rinsed
Instructions

In a pot, heat olive oil over medium heat.

Sauté chopped onion in olive oil until soft.

Optional: After onion is soft, add sujuk and sauté another 1-2 minutes.

Add the tomato and pepper paste and mix well with onions.

Add the diced tomatoes, water, pepper flakes, salt and pepper. Mix well, making sure there are no remaining chunks of tomato and pepper paste.

Add the beans.

Reduce heat and simmer for 15-20 minutes.

Serve in bowls while still warm.
