Kuru Fasulye (White Bean Stew)

This Turkish dish is a great way to prepare beans. It can be served as a side dish or add extra vegetables and meat to serve this as the main course. 

Ingredients

  • 2 tablespoons olive oil

  • ½ onion, chopped

  • Optional: 2 inches of sujuk (beef sausage), thinly sliced

  • 1 tablespoon each, tomato paste and pepper paste

  • 2 Roma tomatoes, diced

  • 1 cup water

  • 1 teaspoon pepper flakes (or to taste)

  • Salt and black pepper to taste

  • 2, 15-oz cans of butter beans or large white beans, drained and rinsed

Instructions

  • In a pot, heat olive oil over medium heat.

  • Sauté chopped onion in olive oil until soft.

  • Optional: After onion is soft, add sujuk and sauté another 1-2 minutes.

  • Add the tomato and pepper paste and mix well with onions.

  • Add the diced tomatoes, water, pepper flakes, salt and pepper. Mix well, making sure there are no remaining chunks of tomato and pepper paste.

  • Add the beans.

  • Reduce heat and simmer for 15-20 minutes.

  • Serve in bowls while still warm.
