Çılbır (Eggs with Yogurt Sauce)

This Turkish food (pronounced chull-ber) is great as an appetizer or side dish. It can also be prepared as a main meal for lunch or dinner. Although it is made with eggs, this isn’t a breakfast food because of its strong garlic flavor.

Ingredients

  • 4-5 eggs

  • 1 cup full-fat yogurt

  • 1 clove garlic, minced

  • Salt to taste

  • 2 tablespoons butter

  • ½ teaspoon spicy red pepper flakes or Aleppo pepper

  • ½ teaspoon dried mint

Instructions

  • Poach eggs.

  • Meanwhile, mix garlic, salt and yogurt together to make the yogurt sauce.

  • In a small saucepan, melt butter.

  • Add hot pepper and mint to butter and cook until fragrant, about 1-2 minutes.

  • Serve poached eggs on a plate, covered with yogurt sauce. Drizzle butter sauce on top.
