Çılbır (Eggs with Yogurt Sauce)
This Turkish food (pronounced chull-ber) is great as an appetizer or side dish. It can also be prepared as a main meal for lunch or dinner. Although it is made with eggs, this isn’t a breakfast food because of its strong garlic flavor.
Ingredients
-
4-5 eggs
-
1 cup full-fat yogurt
-
1 clove garlic, minced
-
Salt to taste
-
2 tablespoons butter
-
½ teaspoon spicy red pepper flakes or Aleppo pepper
-
½ teaspoon dried mint
Instructions
-
Poach eggs.
-
Meanwhile, mix garlic, salt and yogurt together to make the yogurt sauce.
-
In a small saucepan, melt butter.
-
Add hot pepper and mint to butter and cook until fragrant, about 1-2 minutes.
-
Serve poached eggs on a plate, covered with yogurt sauce. Drizzle butter sauce on top.
