Three Bean Chili with Ground Beef

This is a basic chili, with mild flavors. Leave out the beef to make this a vegetarian meal. However, it will lose a lot of flavor without the fat from the beef so spice it up a little bit more with some cumin, chili powder, and a pinch of allspice.

Ingredients

  • 1 15-ounce can pinto beans

  • 1 15-ounce can black beans

  • 1 15-ounce can kidney beans

  • 1 bell pepper, chopped

  • 1 tomato, chopped

  • ¾ cup onion, finely chopped

  • 1 pound ground beef

  • 2 tablespoons vegetable or olive oil

  • 1 28-ounce can crushed tomatoes

  • 1 teaspoon salt

Instructions

  • In a large pot, heat oil over medium heat.

  • Add onions and peppers and sauté until tender.

  • Add ground beef and brown.

  • Add chopped tomato and crushed tomatoes.

  • Add salt to taste.

  • Bring to a boil, then reduce heat, cover, simmer and cook for about 25 minutes.

  • Stir in the beans and cook for another 10 minutes, until the beans are heated.

Serves: 6
