





Three Bean Chili with Ground Beef
This is a basic chili, with mild flavors. Leave out the beef to make this a vegetarian meal. However, it will lose a lot of flavor without the fat from the beef so spice it up a little bit more with some cumin, chili powder, and a pinch of allspice.
Ingredients

1 15-ounce can pinto beans

1 15-ounce can black beans

1 15-ounce can kidney beans

1 bell pepper, chopped

1 tomato, chopped

¾ cup onion, finely chopped

1 pound ground beef
-
2 tablespoons vegetable or olive oil

1 28-ounce can crushed tomatoes

1 teaspoon salt
Instructions

In a large pot, heat oil over medium heat.

Add onions and peppers and sauté until tender.

Add ground beef and brown.

Add chopped tomato and crushed tomatoes.

Add salt to taste.

Bring to a boil, then reduce heat, cover, simmer and cook for about 25 minutes.

Stir in the beans and cook for another 10 minutes, until the beans are heated.
