Spinach Walnut Salad 

This is a great summer salad that can be served as a side dish. Add some type of protein to make this a meal. This salad can also be easily modified for most dietary restrictions. If you are cutting back on sugar, swap out the peaches for avocado slices.

Ingredients

  • 1.5 cups Raw Baby Spinach (organic if possible)

  • 1 small handful walnuts

  • 1/2 peach, peeled (if not organic) and thinly sliced OR 1/2 avocado

  • A few slices of chopped salad onions or green onions

  • 1 ounce goat cheese

 

Olive oil - vinegar dressing:

  • 1/2 tablespoon olive oil

  • 1/2 teaspoon balsamic vinegar

  • Dash of salt

Serves: 1
