











Vegetable Scrambled Eggs
Since it is difficult for many people to eat enough vegetables every day, including vegetables at breakfast is a great way to start the day. Try this variation of scrambled eggs to add some variety to your breakfast. It includes 2-3 servings of vegetables.
Ingredients

1 tablespoon olive oil

1 medium carrot, thinly sliced

½ sweet green pepper, chopped

1 medium tomato, chopped

1 teaspoon tomato paste

2 eggs
-
¼ teaspoon dried dill
-
¼ teaspoon dried thyme

Salt and pepper to taste

Cheese (optional)
Instructions

In a pan, heat olive oil over medium heat.

Meanwhile, lightly beat eggs in a small bowl and mix in thyme and dill.

Saute vegetables in oil until tender, about 5 minutes.

Mix tomato paste into the vegetables.

Add the eggs, stirring occasionally until the eggs are cooked, about 3-5 minutes.

Season with salt and pepper to taste.

Optional: mix in cheese.
