Vegetable Scrambled Eggs

Since it is difficult for many people to eat enough vegetables every day, including vegetables at breakfast is a great way to start the day. Try this variation of scrambled eggs to add some variety to your breakfast. It includes 2-3 servings of vegetables. 

Ingredients

  • 1 tablespoon olive oil

  • 1 medium carrot, thinly sliced

  • ½ sweet green pepper, chopped

  • 1 medium tomato, chopped

  • 1 teaspoon tomato paste

  • 2 eggs

  • ¼ teaspoon dried dill

  • ¼ teaspoon dried thyme

  • Salt and pepper to taste

  • Cheese (optional)

Instructions

  • In a pan, heat olive oil over medium heat.

  • Meanwhile, lightly beat eggs in a small bowl and mix in thyme and dill.

  • Saute vegetables in oil until tender, about 5 minutes.

  • Mix tomato paste into the vegetables.

  • Add the eggs, stirring occasionally until the eggs are cooked, about 3-5 minutes.

  • Season with salt and pepper to taste.

  • Optional: mix in cheese.
